Mughlai Chicken Biryani Recipe

Biryani has become one of the most ordered food items online and offline. Every household has one mad biryani lover who never says to biryani be it any time.

Biryani never disappoints you whether it’s chicken or mutton biryani. Recently I’ve tried traditional Mughlai Chicken Biryani Recipe.

Earlier it’s used to be less spicy and as time evolves it’s flavored evolves according to people’s tastes and interests.

This is very easy to make a biryani recipe as all of the ingredients are mostly available at home. Do try this and if you have any queries regarding its’ preparation can ask in comments below or at my youtube channel.

Mughlai Chicken Biryani Recipe

Preparation Time: 15min

Cooking Time: 1.5-2hr

Serve: 6-7 person

Ingredients for Mughlai Chicken Biryani Recipe:

Masala for Chicken Mixture:

  • Chicken 1kg
  • Garlic cloves 8-9
  • Salt to taste
  • Red chilies 5-6no
  • Black Cardamom 1-2
  • Green Cardamon 3-4
  • Star anise 1-2
  • Cinnamon 3-4
  • black pepper 15-16 no
  • cloves 17-19 no
  • Onions sliced 3-4 medium
  • Ginger garlic paste 1tsp each
  • Curd 200gm
  • Oil 6-7 tbsp

Masala For Rice:

  • Rice 1kg (soaked 1hr)
  • Cinnamon 6-7
  • Black pepper 10-11 no
  • Cloves 7-9 no
  • Bay leaf 1-2no
  • Green chilies 15-17 no as per taste
  • Lemon juice 1 tbsp
  • Salt to taste

For Garnishing:

  • Rosewater 2 tsp
  • Secret masala (Mace & nutmeg powder 1tsp each)
  • Brown onions
  • Food Color
  • Green coriander

Step 1: For Chicken Mixture

  1. In a pan add chicken, water, salt, garlic cloves, and red chilies. Put it on the stove and cook till water evaporates and chicken is 70% cooked.
  2. Remove the red chilies and transfer this mixture to another bowl and keep aside.
  3. To the same pan heat oil and add the onion. Fry till onions turn golden brown, add all the chicken masala and cook for 3-4 min.
  4. Add chicken and cook till oil separated. Then keep aside.

Step 2: For Rice preparation:

  1. Heat 3-4 cups of water, add all rice masala and boil it.
  2. Once water is boiled, add rice and boil till rice is 80% cooked.
  3. Turn off the stove. Strain water from rice.

Step 3: Assembling rice and chicken together:

  1. In the same bowl, layer some of the rice first evenly.
  2. The second layer, cover with all the chicken mixture evenly.
  3. Last layer with the remaining rice.
  4. Garnish with brown onions, rose water, green coriander, secret masala, and cover with the lid.
  5. Put on dum, 5min on high flame, 10 min on low flame (adjust timing accordingly.
  6. Serve hot with curd.
