I’ve tried this Dahi vada recipe sp many time and every time it’s more delicious, soft, and creamy than the past.

Those who have eaten it demanded more and all Dahi vada finished in no time.

This recipe is tried and tested that I can bet you will not have any lumps in Dahi vada. It will be soft, creamy, and finger linking that everyone will appreciate your dish.

Dahi Vada is made by soaking urad dal overnight and then grinding and frying to make the vadas. People also use moong dal which is optional.

These vadas are then topped with creamy curd and various dips and seasoning that double its taste.

IngredientsQuantity
Masala For Making Vada:
Urad Dal (soaked overnight in water)250 gm
Oil for frying
Salt to taste
Water (for grinding in mixer)1-2tbsp
Ingredients for Assembling Dahi Vada:
Curd (beaten with sugar)1/2kg
Seasoning for Dahi vada:
Roasted Coriander powder1tsp
Roasted Cumin powder1 tsp
Red chilies powder1 tsp
Green Chutneyas required
Tamrind Chutneyas required
Salt to taste

Dahi Bada Recipe Method:

1. For Making Vada: Soaked urad dal overnight in water. Drain water and grind in a mixer to make a smooth paste. You can add 1-2 tbsp of water as required. The consistency of the batter should be thick.

2. Once the batter is ready transfer to mixing bowl. Brisk vigorously using a beater in one direction for 15min to add air to the batter. You can keep it to rest in the refrigerator or can use it directly.

3. Heat oil in a frying pan for frying vada. Now dip your hands in water and take a small amount or vada in your hand. Rotate in a round motion to give it a round shape.

You can make it flat or triangular in shape or keep dry fruits inside it as per your choice. I’ve made plain vada.

4. For soaking the Vada: Take hot water in a pan, add red chili powder, salt, cumin powder. Now soak these vada in this hot water for 10 min. After 10 min drains this water.

5. Take hot water one more time in a pan add salt and soak these vada gain for at least 1.5hr-2hr. After 1.5 hr, take each vada in your hand and drain excess water by gently pressing in between your palms.

6. Your vada are ready now.

7. For Assembling the Dahi Vada: Whisk yogurt and add sugar to make it sweet in taste.

8. Now in a bowl place 4-5 vada, pour curd all over them so that they are all covered. Now drop tamarind and green chutney. Sprinkle all the seasoning.

9. Dahi Vada is ready to serve.

Points to keep in Mind:

1. You can use urad and moong dal for batter.

2. Whisking the batter in one direction is very important to add volume. If you whisk in both diretcion air will not be added to batter and it will not rise.

3. You can store the vada after frying in refrigerator for 1month. When you want to eat soak in hot water and repeat the same process.

4. If your vada is hard from inside soak them in hot water with salt for 1hr more it will become soft.
